I got a great deal on California avocados so you might see a few avocado dishes this week lol
This was "interesting". It's almost like guacamole but not totally. I smashed the avocado and added salt ,pepper, and italian seasoning. I grilled up some tail off large shrimp. I used the avocado mixture as a as a dip and served it as an appatizer. It was a HUGE hit. Serve and ENJOY!

Yummy Breakfast

I love most of the Jenny-O products. These breakfast sausages are the BEST. they say Gluten free on the back. I just put them in a pan with a bit of corn oil. Serve and ENJOY!

Simple Nachos

I got some 100% corn tortilla chips , shedded cheese, smashed Avocado and organic sour cream. Just toss the cheese on the chips put them in the oven until the cheese is melted then top with Avocado sour cream and salsa. Mmmmm Good. Serve and ENJOY!

Chocolate cookies OH MY!!!

I am a huge chocolate lover. The thought of never having another GOOD tasting chocolate cookie again was heart breaking. Ok maybe that's a bit of an exadreration but it did piss me off lol My friend found me these AMAZING Dark Chocolate Chocolate Chunk cookies by Pamela's. I had to hide these from myself because I almost ate the whole box in 2 days lol. These are a total MUST have for anyone who loves chocolate.

I heart Brown Rice

I am one of those odd people. I love brown rice. I found this GREAT turkey sausage by Jenny-O. I read the back of the package and gluten/wheat anything everything else was NOT listed. So woohoo I picked up a package. The sausage is Italian flavored. I did put a bit more salt and pepper on it to make it more tasty. I "boiled" the sausage in about a half inch of water in a pan then fried them up in corn oil. I then cut the sausage into slices and cried it on each side for about one minute. Then drained it on a paper towel and set it aside. I got the simple boil-in-bag brown rice. Seasoned the rice with salt and pepper. Plated it up served and ENJOYED!

Just Add water

Ok I love things where you just add water. These taters you can even make in the microwave. These taters were on sale at our local market for $1 a package. All you need are two cups of water and a microwave or stove top. Let them cook 3 - 5 minutes and BAMMMM mashed taters. YAY!! They come in a few different flavors my favorite is "Homestyle" Mmmmm good. Heat...Stir...and ENJOY!!!!

Crackers and dip

During my last trip to Trader Joes I found these GREAT gluten free crackers called Savory Thin Mini Edamame Crackers. They are ultra tasty. I paired them with Trader Joes Roasted red Pepper Hummus. The Hummus is very "rich" and creamy. The crackers are lightly salted. This was a GREAT snack. TOO great. I ate almost a whole bag lol Spread the hummus on the crackers and ENJOY!

YAY!!

I was so happy to see a gluten free cake mix the last time I went to the market. I haven;t tried these yet but wanted to let everyone know that YES we can have pre packaged cake mixes again. Betty Crocker seems to be the first big name to make the box mixes. woohoo. If you try these PLEASE let me know how they came out. I have used the cookie mix and it was really good. ENJOY!

This is something we have all had and many of us love. The simple salad. Grab your favorite salad fixings (most of which are gluten free). Stay away from the creamy dressings. It's wrap time!

I am a huge lover of lettuce wraps. This is a nice natural gluten free wrap. I grilled a boneless skinless chicken breast, sliced a tomato and cut up my favorite cheese (pepper jack) and wrapped it in fresh lettuce. You can fill these with any fresh gluten free items you'd like. Wrap and ENJOY!!!

These are some great chips I found at the local CVS store. They are rice chips by a company called Rice Works. I love the salsa fresca ones. Mmmmmmm GOOD!They were only 99 cents *gasp* A tasty treat for cheap. That's soooooooooooo me. Rip open a bag and ENJOY!

Chocolate puddin'

I am a huge pudding fan. I found these cute little individual instant pudding packets at the 99 cents store. We will talk about my sick obsession with the 99 cent store at a later time lol These are totally easy. You just add milk and stir. No REALLY that's all you do lol I must admit when I saw the words "sugar free" i automatically thought taste free but I was oh so wrong. This stuff tastes great. These are "single" serving sizes. It was a bit much for me to eat all at once but I did finish it over the course of the day. Mmmmm Good. ENJOY!

PIZZA DAY!!!!

OK this is what I had been waiting for. I cried at the thought of never being able to have another slice of pizza. I found some pizza crust mix that is gluten free and had some fun. WOOHOO it was sooooooooooo easy. I even had a kitchen helper. My 2 (almost 3 year old) cousin. Miss Maya! We were all shocked that she was so calm and into making her own pizza. She was VERY proud of the result. So I will show you her pizza on gluten free crust. Shhhhhh she had no idea lol

OK so here goes *giggle*


1. Follow the directions on the pizza crust mix. This one all you needed was to add water and oil. SUPER easy You mix it then pour it onto a cookie sheet or pizza pan and bake it until it's nice and crisp (less time if you want it softer). I baked mine for 15 to 20 minutes.
2. I made my own sauce. I used my hand blender and blended 4 tomatos. I seasoned them with salt,pepper and italian seasoning. Then blended some more. It was quit thin so I added a bit of tomato paste (read your labelsto make sure it is gluten free. I used the store brand).
3. Your toppings. Use whatever gluten free goodies that you'd like. My kitchen helper who is almost 3 and not allergic to gluten wanted pepperoni. I got her turkey peperoni. I used Pizza cheese (store brand) for topping as well.
4. Remove crusts from the oven and begin topping. Pop them back into the oven until your cheese melts.
5. Remove finished pizza from oven. Let stand for a minute or so. This alows the toppings to "settle". Cut and ENJOY!

Food Find

Today's food find is a VERY yummy cereal by EnviroKidz. It's an organic Gluten free Frosted flake cereal. I didn't think I'd like them but they are totally tasty. I ate mine with some organtic extra cold milk and fresh fruit. Great breakfast! Enjoy!

bacon wrapped asparagus

Mmmmm Mmmmmm GOOD! I love asparagus by itself but wrapped in bacon was soooo much better AND gluten free. These are totally easy to make.

8 slices of center cut bacon
24 sticks of asparagus (servers 4 people)
Extra Virgin Olive Oil
Pepper (to taste)
Cookie sheet
Oven safe rack

Take 3 asparagus sticks and starting at the bottom wrap the center cut bacon around them all the way up. Continue until all bundles are wrapped.
Place rack on cookie sheet and position wrapped asparagus on rack. Drizzle with extra virgin olive oil and sprinkle with pepper. Place in oven at 400 degrees for 10 to 12 minutes. I cooked mine for 15 minutes and that was a bit too long. The tops got a bit brown. Serve and ENJOY!

Red Curry Noodles and Shrimp

Taste of Thai makes some GREAT rice noodle dishes that are totally gluten free. You just add water and pop it in the microwave. In the container it came in. Little to no mess.I grilled some fresh shrimp and added them to the noodle. Simple and quick. It all took less than 10 minutes to make. Serve and enjoy! Be careful with these noodles. They are VERY high in carbs.

Home Made Ice Cream sandwiches

This was totally fun to do. I used the Betty Crocker gluten free cookie mix and raspberry sherbet. Mmmmm Good. These are easy to put together. Follow the instructions on the cookie mix. These cookies take a bit of elbow power. The dough is thick and hard to mix at first and is pretty dry. Bake the cookies at 325 degrees. If you have non stick cookie sheets I'd say you should still spray them with non stick spray. I didn't and they stuck a bit. Allow the cookies to cool. Take the sherbet out of the freezer and let soften so you can spread it on the cookies. When softened spread sherbet on one cookie and top with another cookie. Put them back in the freezer for 30 - 45 minutes so they can set. Serve and ENJOY!

Chicken Salad

This is totally something easy you can put together yourself. I happened to buy mine at Juan Pollo http://www.juanpollo.com/ (turn your speakers OFF when going to this site. It's annoying as heck lol). It is a simple chicken salad. This was lunch and dinner for me today.

1/2 head of ice burg lettuce
1 cup of cooked white meat chicken
1 cup of shredded cheese
1 sliced tomato
For the record MOST blue cheese dressings are NOT gluten free. I ordered this with blue cheese and found it contained wheat so I just put regular salsa on it. It's healthier that way anyway. Enjoy!

Home Made Chicken Soup

It's so hard to find a good gluten free chicken soup so I made my own. It came out quite nice.

1 box/carton of gluten free chicken broth (store brand)
1 cup of gluten free pasta shells
1/2 bags of frozen peas and carrots
1 cup of crock pot cooked Chicken breasts
salt (to taste)
pepper (to taste)

I didn't make the soup in the crock pot like I normally do. I combined the chicken broth,peas,carrots, and chicken breasts in a pan on medium heat covered for 20 minutes. Then I added the pasta shells and let it cook for 10 more minutes. Serve and Eat. Enjoy! Sorry I tossed the box of chicken broth so I didn't get a picture of it.

A nice Breakfast

Today started off kind of late. I worked at my normal job until 4am and had to be up at 11:00am to get ready for my infant care giving job @ noon. So I fixed a nice healthy fast gluten free breakfast. I went with a home made egg white omelet.

3 eggs whites
1 Slice of thinly sliced turkey
2 table spoons of shredded cheese
2 table spoons of gluten free salsa

Salt (to taste)
Pepper (to taste)

Ok so I need to work on my "plating" lmao I'm still learning. It really was good. This is only half of it. I split it with the 13 month old I babysit minus the salsa of course. Make sure you read you backs of ALL your packages. Not all lunch meats are gluten free. I try to buy store brand to save money. All the items used in this meal were store brand.

Gluten Free YAY ME!

I haven't felt "good" in years. Seems like I overall just never feel good. I always have yucky tummy problems, headaches,fertility issues,moodiness, numbness in my legs and a host of other things. FINALLY we may have figured out wtf is wrong with me. I'm allergic to gluten. YAY!!! for figuring it out, right? WRONG! Not in my family. In my family I pretty much come last as it is. I don't really mind anymore. It's called life. My family is now pissed off because
when going out to eat with them I can't eat the same things I used to. So that upsets them because it's just me being "difficult" or something. My mother actually LAUGHED at me when I told her and informed me I was stupid and just going through the "change of life". Which is horrible for someone who is trying to have a baby to hear. Does she care? Nope. Never has and never will. So here I sit in my office fishing shrimp out of the pasta dish my mother sent over. I was off gluten for a few days then by my own stupidity I had a crustini which of course has bread on the bottom. I did one of those "a little bit wont hurt". I got sicker than I had been in a long time. I went online and realized that eating gluten after having been off it for awhile can make you really sick. Lesson learned. A little bit can hurt. My aunt got mad at me because I got sick and said I wont be traveling with her anymore. I'm still new at this G-free thing. Give me a break. So pretty much my family is unhappy that I have to be G-Free. I have been totally off gluten for a month now now and wow I feel great. This will be a work in progress for awhile and it seems it will be a work I have to do alone since my family is as supportive as a training bra on my 34DDDs. lol I am just so happy we may have found out what's been making me so sick. I honestly was afraid that I was dying and that I'd never know why. I told my mom I was afraid I was dying and she told me that we are all dying everyday we live. Which is true but it's just scary when you think you're doing it faster than everyone else.
